Located at 925 W. Fulton Market, the massive 14,000-square-foot space is designed as a brilliant conceptual prequel to the classic Gibsons Bar & Steakhouse, transporting diners back to a 1918-era Chicago tavern experience.
A Turn-of-the-Century Atmosphere
The new location leans heavily into historic, turn-of-the-century aesthetics. Before even stepping inside, guests are greeted by classic green awnings and a glowing, illuminated block-font marquee.
The interior of Gibsons Tavern is sprawling, designed to seat around 600 people across multiple distinctly themed rooms. The architectural details are stunning, featuring cathedral-vaulted ceilings, vintage sconces, and cozy elements like a converted old billiards room. The layout offers a seamless transition in dining experiences: guests can grab a drink in the more casual, high-energy front bar area before moving into a highly formal dining room with classic tableside cart service.
The Menu: Tavern Comfort Meets Steakhouse Luxury
To match the ambitious design, Gibsons tapped Chef Rick Tramonto to create a menu that perfectly balances elevated tavern comfort food with the premium steakhouse fare the brand is famous for.
Diners can expect approachable, hearty tavern classics like chicken pot pie, daily fresh pasta specials, and premium burgers. However, the kitchen is also fully equipped to deliver the luxury steakhouse experience, serving Gibsons signature steaks, fresh fish, and decadent, iconic desserts. To complement the 1918 theme, the beverage program features a robust lineup of Prohibition-inspired craft cocktails.
Whether you are looking for a casual post-work drink at a historic-feeling bar or a full-blown tableside steak dinner, this new Fulton Market destination promises to be one of the most exciting Chicago restaurant openings of the year.
